This Healthy Italian Chicken recipe is paired with Steamed Artichokes and Baked Sweet Potatoes for a full “1-2-3 Eat!” meal.
Ingredients
Italian Chicken
- 1/4 cup extra virgin olive oil
- 1/4 cup Balsamic Vinegar
- 1 Tbsp bottled minced garlic
- 1 Tbsp fresh parsley minced
- 1 Tbsp fresh basil minced
- 1/2 tsp red chili flakes
- 4 boneless, skinless chicken breast
Steamed Artichokes
- 4 artichokes
- 1/4 cup unsalted butter
Baked Sweet Potatoes
- 4 sweet potato
Instructions
Italian Chicken
- Combine all ingredients in a large zip top plastic bag. Allow to marinate in fridge 30 minutes. Preheat grill to medium heat. Grill chicken over medium-low heat 4-5 minutes per side or until chicken is no longer pink in center.
Steamed Artichokes
- Wash artichokes. Cut stems and tops off of artichokes. Place artichokes upright in large pot. Cover with water. Bring to a boil. Reduce heat, cover, and simmer 25-45 minutes or until leaves can easily be pulled out. Serve with melted butter.
Baked Sweet Potatoes
- Preheat oven to 400. Pierce potatoes and place in baking dish. Bake at 400 for 45 minutes or until soft. Serve plain or with butter and cinnamon.
Notes
Also, don’t forget to start your artichokes extra early today as they take 3 hours in the slow cooker!
