Another fabulous “1-2-3 Eat!” meal. Grilled Steak with Smothered Onions (protein), is paired with Asparagus (veggie) and mashed sweet potatoes (starch).
Ingredients
Grilled Steak with Smothered Onions
- 1 1/2 lb sirloin steak
- kosher salt
- pepper
- 2 yellow onion medium, thinly sliced
- 1 Tbsp unsalted butter
Roasted Asparagus
- 1 lb asparagus ends trimmed
- 3 Tbsp extra virgin olive oil
- 2 tsp kosher salt
Mashed Sweet Potatoes
- 4 sweet potato large
- 2 Tbsp unsalted butter
- 1/4 tsp cinnamon optional
Instructions
Grilled Steak with Smothered Onions
- Preheat grill to medium heat.
- Heat butter in a medium skillet. Add onions. Sauté 10-15 minutes or until browned and soft. Set aside.
- While onions are cooking, sprinkle steak with salt and pepper. Grill 4-7 minutes per side or until steak has reached desired doneness. Serve onions on top of steak.
Roasted Asparagus
- Preheat oven to 400. Cut asparagus into 2 inch pieces. Toss asparagus in oil. Arrange in a single layer on a baking sheet. Sprinkle with salt. Bake at 400 for 15-20 minutes or until beginning to brown.
Mashed Sweet Potatoes
- Peel potatoes. Cut into large chunks. Place chunks in a medium saucepan. Cover with water. Bring to a boil. Boil 12-18 minutes or until soft. Drain. Add butter and cinnamon, if using. Mash with potato masher, fork, or blender.
