Grilled Shrimp with Roasted Asparagus and whole wheat rolls. A full meal on one recipe page that is as simple as 1-2-3 eat!
Ingredients
Grilled Shrimp
- 1 lb shrimp large, thawed, and peeled
- 1 tsp salt
- 1 tsp pepper
- 1 Tbsp lemon juice
Roasted Asparagus
- 1 lb asparagus tough ends trimmed, cut into 2 inch pieces
- 2 Tbsp extra virgin olive oil
- 1 tsp salt
Whole Wheat Rolls
- 4 each 100% whole wheat dinner rolls
Instructions
Grilled Shrimp
- Place shrimp in a large bowl. Sprinkle with salt and pepper. Drizzle with lemon juice. Toss to coat. Grill in a grill basket coated with cooking spray over medium heat for 6-8 minutes or until shrimp is opaque. Serve with more lemon juice, if desired. 4 servings (If you don’t have a grill basket, put the shrimp in a large piece of foil. Fold the foil up and fold the edges together to form a seam. Repeat with each end to form a packet. Grill as directed.
Roasted Asparagus
- Combine asparagus and olive oil. Stir until well-coated. Spread in a single layer on a cookie sheet. Sprinkle with salt. Bake at 400 20 min or until tender crisp and beginning to brown.
