Grilled Pork Tenderloin paired with roasted grape tomatoes and quinoa. This is a classic 1-2-3 eat dish.

Ingredients
Grilled Pork Tenderloin
- 2 lb pork tenderloin unflavored
- 1 tsp kosher salt
- 1 tsp pepper
Oven Roasted Tomatoes
- 2 pints grape tomatoes halved
- 3 Tbsp extra virgin olive oil
- 2 tsp kosher salt
- 1 tsp pepper
- 1 tsp oregano
Quinoa
- 1 cup quinoa any color, uncooked
- 2 cups vegetable broth
Instructions
Pork Tenderloin
- Preheat grill to medium. Sprinkle pork with salt and pepper. Grill over med heat for 20 min, or until juices no longer run pink. Remove from grill and let rest 5 minutes before slicing.
Oven-Roasted Tomatoes
- Preheat oven to 450. Toss tomatoes in olive oil until well coated. Arrange in a single layer on a baking sheet. Sprinkle with salt, pepper, and oregano. Bake at 450 for 15 minutes
Quinoa
- Add quinoa and broth to a saucepan and bring to a boil. Reduce heat cover and simmer until all liquid is absorbed (about 15 min). Fluff with a fork and serve.
