Another great “1-2-3 Eat!” meal.  This 1-2-3 Eat! BBQ Pork (protein), is paired with corn on the cob (starch/grain), and 7 minute green beans (veggie).  1-2-3 and you’re done.

1-2-3 Eat! BBQ Pork

1-2-3 Eat! BBQ Pork, Corn on the Cob, 7 minute Green Beans

Ingredients

BBQ Pork

  • 1/2 cup unsweetened applesauce
  • 1/4 cup pure maple syrup
  • 1 Tbsp strawberry fruit-only preserves such as Polaner All Fruit
  • 1 Tbsp Balsamic Vinegar
  • 1 tsp Bragg Liquid Aminos
  • 1 can tomato paste 6 oz
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 Tbsp mustard
  • 1/4 cup white wine vinegar
  • 1/4 cup water
  • 1 1/2 lb pork tenderloin

Corn on the Cob

  • 4 ears corn on the cob
  • unsalted butter for topping, if desired
  • salt for topping, if desired
  • pepper to taste, if desired

Green Beans

  • 1 lb green beans trimmed
  • salt to taste, if desired
  • pepper to taste, if desired

Instructions

BBQ Pork

  • Preheat grill to medium. Rinse pork, and pat dry. Combine applesauce, maple syrup, preserves, balsamic vinegar, Aminos, tomato paste, onion powder, garlic powder, mustard, white wine vinegar, and water in a sauce pan. Mix well. Heat to boiling. Reduce heat to low, and simmer 20 min or until thickened. While sauce is cooking, grill pork, about 20 min or until no longer pink in center. Serve pork with sauce.

Corn on the cob

  • Shuck corn and place in large stock pot. Cover with water. Bring water to boil, and boil 10 minutes. Remove from water and serve warm.

Green Beans

  • Bring 6 c. of water to boil. Add green beans and cook for exactly 7 minutes. Drain and serve.
