I just LOVE the colors on the plate here. Pleasing to the eye as well as to the palate! This clean eating baked salmon is paired with parmesan purple potatoes and simple steamed veggies for a “1-2-3 Eat! Meal”.
Ingredients
Baked Salmon
- 4 salmon fillet 4-6 oz. each
- 2 Tbsp lemon juice
- 2 Tbsp bottled minced garlic
- 2 Tbsp extra virgin olive oil
- 1 tsp salt
- 1 tsp pepper
Parmesan Purple Potatoes
- 16 purple potato halved
- 1/4 cup unsalted butter
- 1/2 cup parmesan cheese grated
Steamed Vegetables
- 1 bag steam in the bag vegetables such as green beans or mixed vegetables
Instructions
Baked Salmon
- Preheat oven to 400. Place salmon in a greased baking dish. Combine lemon juice, minced garlic, olive oil, salt, and pepper in a blender. Blend until well combined. Pour over salmon. Bake uncovered at 400 for 10-15 minutes or until salmon is opaque and flakes easily when pricked with a fork.
Parmesan Purple Potatoes
- Place butter in a 8 inch square baking dish. Place baking dish in oven. Preheat oven to 400. Butter will melt as oven preheats. When butter is melted, top with cheese. Place halved potatoes cut side down on top of cheese. Bake at 400 for 30 minutes.
Steamed Vegetables
- Steam vegetables according to package directions. Serve.
